Delicious Cinnamon Rolls

These were soooo good. They are no yeast cinnamon rolls. I wish I could claim the recipe but it's found at this link... http://www.recipezaar.com/Quick-and-Easy-Cinnamon-Rolls-Yeast-Free-219439
I did the filling a little bit different. I just used white sugar, cinnamon and butter. I did not use raisins. I also put an egg wash on top so they browned up on top.
They were so tasty...

Peanut Sauce Noodles


This picture sucks because I took it on my phone. Today I made peanut sauce noodles which I sometimes call pad Thai, but I know that it's probably not authentic Thai. I am missing a lot of ingredients I normally use but that's good because that way you know you can make it with about anything.


2 chicken breasts chopped in to pieces
1/2 lb of whole wheat pasta (any kind works, it also tastes really good with the Asian noodles but I think whole wheat pasta is a little more nutritious)
Veggies ( I used frozen green beans, peas and edimame (spelled wrong) beans. You could also use carrots, peppers, etc.. use your imagination)
a handful of peanuts
1 tsp of fresh ginger
pepper
salt
garlic powder or the real thing... either or :)

Peanut sauce
1/2 cup peanut butter
*2 Tbsp Honey *only if the peanut butter isn't already sweetened
2 tsp lemon/lime juice (better with lime)
2 Tbsp soy sauce
1/2c hot water
Mix all together in a bowl till you get a creamy consistency

First boil your noodles or follow the cooking directions on the package. In a frying pan add some cooking oil. When the pan is good and hot add the chicken and let it cook and get brown. Once the chicken is cooked add the ginger, veggies, peanuts and spices to taste. After everything is cooked and heated add the cooked pasta in with the veggies and chicken. Finally, pour the peanut sauce on the top of everything and give it 1-2 minutes in the frying pan while stirring. If you're feeling spicy, you can add some hot sauce on top when you're ready to serve. Enjoy!

Chrissy's Chili Recipe... A recipe from a Registered Dietitian!

1 lb. lean ground beef
1 can (bigger can) tomato paste
1 can tomato sauce
1 can kidney beans
1 can black beans
1 green bell pepper
1 onion
4 cloves garlic
cumin
hot sauce
chili powder
salt
pepper

Just cooked the meat, added the garlic, onion, pepper and cooked.. Added the tomato sauce and paste, then the spices and let simmer for about 10 minutes. Then I drained the beans, rinsed with water (to decrease salt, haha) and added them to the pot. I kept adding hot sauce until it was spicy enough...I also just added spices til I thought it tasted good.

Apple French Toast

For the French Toast:
6 bread slices, any kind of bread
3 eggs
1 tsp cinnamon
1 tsp of vanilla

For the Apple syrup
1 apple sliced in to thin slices
1/3 cup water
1/4 cup brown sugar
1 tsp cinnamon

First crack 2 to 3 eggs into a bowl big enough to put a piece of bread in it. Scramble the eggs. Add 1 tsp of vanilla and 1 tsp of vanilla to the scrambled eggs.

Grease your pan and turn it to medium. Once the pan is hot, dunk once side of the bread slice in the egg mixture. Then flip the bread so that both sides are covered in eggs. Put the bread in the pan. Cook until the side face down gets brown then flip. Once both sides are cooked take it out of the pan. Repeat with all 6 slices.

For the apple syrup. Take the sliced apple, brown sugar and water and heat on medium high. Stir occasionally. Cook until the apples are soft.

When all the french toast is done cooking, place 3 slices on each plate. Pour the apple syrup on the french toast and serve. Enjoy!

Quick Biscuits

These are the easiest thing to make. They are peppered turkey and cheese biscuits! They are good for lunch, a side for dinner or even breakfast and you can add whatever ingredients you have and like.

1 cup Bisquick
milk
grated cheddar cheese (but you can use whatever you have)
sliced peppered turkey lunch meat (also can use whatever you have)
Pepper

Heat your oven to 400 degrees.

All you do is mix the Bisquick with enough milk to get a thick dough. Start adding in 1/4 a cup, then just keep adding until the dough is think and sticky. Next add your grated cheese and lunch meat. Mix well so that the cheese and lunch meat spread through out the mixture. Next, drop them on a greased baking sheet in lumps of about3-4 inch diameters. Just make them in the shape you would like to eat them. I usually just drop them on the baking sheet in big spoon fulls. Put them in the oven and bake them for about 10 minutes or until the tops are turning golden brown. Cool them for a few minutes, then enjoy!

Dinner At Our Friends

Pretty Desserts :) (but yeah, I didn't make them, I bought them)

Last night we went to our friends house for dinner. We had Alfredo Spaghetti, Parmesan Chicken, Green Beans and Salad.
The alfredo, of course, was delicious. The chicken was really good too but I didn't find out the recipe. I know that they cooked it in a frying pan with some olive oil and some parmesan cheese recipe but I couldn't figure out what it was. It was really tasty.

The desserts on the left are from New Seasons. On the top layer there are these raspberry pastries (not exactly sure what they are), the second layer is white cupcakes, and the bottom layer is 'haystacks'. The Haystacks were coconut clumps covered in chocolate. They were pretty good but I thought they were a little too big. They were REALLY sweet so it was hard to eat the whole thing. There are also Hawaiian shortbread cookies in between the desserts which, in my opinion, are the best things on there. I don't know if those desserts are the best thing ever, but they were good enough.

Overall the night went really well except we lost at Taboo and the Beavers lost their football game!

Most likely tonight we will be eating pizza... but you never know :)

Lite Dinner Last Night










Simple Salad and a Baguette with a Balsamic Vinegar Dressing

Salad Ingredients

Romaine Lettuce
1/2 a tomato, diced
1/2 an orange pepper, diced
1 carrot diced or chopped, however you like it
2 slices of peppered turkey lunch meat (found it at the deli counter)

Just chop and mix all of these ingredients together in a bowl.

Balsamic Dressing.. Good for dipping bread in and the Simple Salad

1 clove of garlic, minced
3-4 tablespoons of balsamic vinegar
5 dashes of tabasco (or to taste)
1-2 tsp honey
(you could add olive oil but I don't like to because i love vinegar)

Combine all these ingredients in a small bowl. Use half for salad and the other half for the bread.


Yesterday I wasn't too hungry for dinner because around 2pm I went to Muchas Gracias for chips and salsa. I was on a long conference call at work and needed a break. I had already ate lunch, but was still a ltitle hungry. So I went over to Muchas Gracias, ordered chips and salsa, put hot sauce on it and took a 30 minute break from work.
Tonight I'm going to some friends house for dinner. I will blog about what they cook us tomorrow. I'm cheeting because I'm not going to make a dessert, I'm going to buy it. I will probably try to pretend I made it but will tell them shortly after they eat it that I bought it.

Pineapple Fried Rice... and a little about the Mango Ribs


I made the Mango Ribs and the Pineapple Fried Rice last night. The Mango Ribs need a little work before I post the recipe... I don't want to embarrass myself.
The Pineapple Fried Rice was wonderful. The pineapple adds such a wonderful sweet taste to the soy sauce in the fried rice and it also goes with the ginger. Oh, and sorry, I forgot to take a picture :(



Pineapple Fried Rice

2 1/2 cups of Brown Rice
1 can of Diced Pineapple
2 carrots diced or cut into small pieces
1/2 cup of frozen peas
half of a sweet onion diced
2 cloves of garlic, diced
3 eggs
about a tablespoon of fresh ginger, diced
1 Tbsp of Soy Sauce
extra virgin olive oil

To start, cook the rice with an equal part water in a microwave safe bowl on high in the microwave for about 8 minutes. In a frying pan, heat about a tablespoon and a half of olive oil and add the chopped carrots (since they take the longest to cook). After they have cooked for about 4-5 min, add the onions, garlic, ginger, and frozen peas (they will defrost). Stir frequently. After the peas are defrosted, crack the 3 eggs into the mixture and scramble. Keep stirring the eggs until they are fully cooked, then add the cooked rice and canned of pineapple. Mix everything together well and add the soy sauce. Continue stirring until everything looks mixed together and everything is hot. Serve and Enjoy!

Taco Salad Inspired By Heidi

Taco Salad



Salad Goods
Romaine Lettuce
1 diced vine tomato
1 avocado
1 8 oz can of sliced Olives
1/4 cup (about) of diced Sweet Onions
1 can of organic Black Beans

1 lb of ground beef (i used organic)
To the browning ground beef add
1 Tbsp Chili Powder
1 Tbsp Cumin
1 clove of garlic

For the Dressing
Regular Sour Cream
Medium Salsa

All you have to do for the salad is chop all the veggies to your liking. Put them all on a plate with a spoon for grabbing. For the ground beef, put in a pan on medium heat until brown. When the beef is 3/4 of the way to being done add the chili powder, cumin, and garlic. Place that in a bowl next to the salad fixings. In a bowl mix salsa and sour, about 2/3 salsa and 1/3 sour cream. All you have to do now is mix your favorite ingredients in a bowl, spoon some dressing on and enjoy.

This was inspired by Heidi because during our daily emails she mentioned that she was going to have Taco Salad for dinner. This craving lasted all day. So there you have it, Taco Salad inspired by Heidi.
