Peanut Sauce Noodles


This picture sucks because I took it on my phone. Today I made peanut sauce noodles which I sometimes call pad Thai, but I know that it's probably not authentic Thai. I am missing a lot of ingredients I normally use but that's good because that way you know you can make it with about anything.


2 chicken breasts chopped in to pieces
1/2 lb of whole wheat pasta (any kind works, it also tastes really good with the Asian noodles but I think whole wheat pasta is a little more nutritious)
Veggies ( I used frozen green beans, peas and edimame (spelled wrong) beans. You could also use carrots, peppers, etc.. use your imagination)
a handful of peanuts
1 tsp of fresh ginger
pepper
salt
garlic powder or the real thing... either or :)

Peanut sauce
1/2 cup peanut butter
*2 Tbsp Honey *only if the peanut butter isn't already sweetened
2 tsp lemon/lime juice (better with lime)
2 Tbsp soy sauce
1/2c hot water
Mix all together in a bowl till you get a creamy consistency

First boil your noodles or follow the cooking directions on the package. In a frying pan add some cooking oil. When the pan is good and hot add the chicken and let it cook and get brown. Once the chicken is cooked add the ginger, veggies, peanuts and spices to taste. After everything is cooked and heated add the cooked pasta in with the veggies and chicken. Finally, pour the peanut sauce on the top of everything and give it 1-2 minutes in the frying pan while stirring. If you're feeling spicy, you can add some hot sauce on top when you're ready to serve. Enjoy!

hi this sounds delicious.. and simple enough for me to have a go at (i like things that i can throw into the one pan lol) i have most of the ingredients ot hand apart form the handful of peanuts.. so will be giving this a go soon :)
