Pineapple Fried Rice... and a little about the Mango Ribs


I made the Mango Ribs and the Pineapple Fried Rice last night. The Mango Ribs need a little work before I post the recipe... I don't want to embarrass myself.
The Pineapple Fried Rice was wonderful. The pineapple adds such a wonderful sweet taste to the soy sauce in the fried rice and it also goes with the ginger. Oh, and sorry, I forgot to take a picture :(



Pineapple Fried Rice

2 1/2 cups of Brown Rice
1 can of Diced Pineapple
2 carrots diced or cut into small pieces
1/2 cup of frozen peas
half of a sweet onion diced
2 cloves of garlic, diced
3 eggs
about a tablespoon of fresh ginger, diced
1 Tbsp of Soy Sauce
extra virgin olive oil

To start, cook the rice with an equal part water in a microwave safe bowl on high in the microwave for about 8 minutes. In a frying pan, heat about a tablespoon and a half of olive oil and add the chopped carrots (since they take the longest to cook). After they have cooked for about 4-5 min, add the onions, garlic, ginger, and frozen peas (they will defrost). Stir frequently. After the peas are defrosted, crack the 3 eggs into the mixture and scramble. Keep stirring the eggs until they are fully cooked, then add the cooked rice and canned of pineapple. Mix everything together well and add the soy sauce. Continue stirring until everything looks mixed together and everything is hot. Serve and Enjoy!
